1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup packed brown sugar

1/4 cup granulated sugar

1 teaspoon baking powder

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/4 cup vegetable oil

1 large egg

1 teaspoon vanilla extract

1 cup powdered sugar (for glaze)

1 tablespoon milk (for glaze)

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a donut pan by greasing it lightly or spraying with non-stick cooking spray to ensure easy release of the donuts.

    Prepare the Zucchini: Grate the zucchini using a box grater or a food processor. To remove excess moisture—which can make the donuts soggy—place the grated zucchini in a clean kitchen towel and squeeze out as much liquid as possible.
