Ingredients

1 lb (450g) carrots, peeled and cut into sticks

1 lb (450g) parsnips, peeled and cut into sticks

3 tablespoons pure maple syrup

2 tablespoons extra virgin olive oil

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon apple cider vinegar

1/4 cup unsalted butter, cut into small cubes

Chopped fresh parsley, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature will help achieve a beautiful caramelization on your vegetables.

Prepare the Vegetables: In a large mixing bowl, combine the sliced carrots and parsnips. Ensure they are evenly mixed to promote even cooking.

Create the Maple Glaze: In a separate bowl, whisk together the maple syrup, extra virgin olive oil, sea salt, black pepper, thyme leaves, and apple cider vinegar until the mixture is fully combined and smooth.

Combine Ingredients: Drizzle the glaze over the prepared carrots and parsnips. Using your hands or a spatula, toss the vegetables thoroughly until they are evenly coated in the flavorful mixture.

Spread for Roasting: Transfer the glazed vegetables onto a large baking sheet, spreading them out in a single layer. Avoid overcrowding to ensure they roast rather than steam. Evenly scatter the cubed butter over the top of the vegetables.

Roasting in Oven: Place the baking sheet in your preheated oven and roast the vegetables for approximately 25-30 minutes. Stir once halfway through the cooking time to promote uniform browning. The goal is to achieve tender, caramelized carrots and parsnips.

Garnish and Serve: Once they are done roasting, remove the baking sheet from the oven. Optionally, sprinkle chopped fresh parsley over the top for a pop of color and extra freshness. Serve warm, reveling in the delightful sweet and savory flavors!
