1 lb Brussels sprouts, trimmed and halved

2 medium apples (preferably Honeycrisp or Fuji), cored and sliced

1/4 cup pure maple syrup

2 tablespoons extra virgin olive oil

1 teaspoon Dijon mustard

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Salt and freshly cracked black pepper to taste

1/2 cup pecans, chopped (optional)

Fresh thyme sprigs for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) so it’s hot and ready for roasting.

    Prepare the Maple Glaze: In a small mixing bowl, combine the pure maple syrup, extra virgin olive oil, Dijon mustard, ground cinnamon, ground nutmeg, and a pinch of salt and pepper. Whisk these ingredients together until the mixture is smooth and well blended.

      Combine Ingredients: In a large mixing bowl, combine the halved Brussels sprouts and sliced apples. Pour the prepared maple glaze over the top, then use your hands or a spatula to toss everything together until the sprouts and apples are evenly coated in the glaze.

        Spread on Baking Sheet: Line a large baking sheet with parchment paper for easy cleanup. Next, spread the Brussels sprouts and apple mixture on the baking sheet in a single layer, ensuring that the cut sides of the Brussels sprouts are facing down. This positioning will help them caramelize beautifully.

          Roast: Place the baking sheet in the preheated oven. Roast for 25 to 30 minutes, stirring the mixture halfway through the cooking time. The Brussels sprouts should become tender and caramelized while the apples soften slightly.
