Ingredients

1 large head of cauliflower, cut into bite-sized florets

3 tablespoons extra-virgin olive oil

2 tablespoons pure maple syrup

2 tablespoons Dijon mustard

1 teaspoon garlic powder

1 teaspoon smoked paprika

Sea salt and freshly cracked black pepper, to taste

Fresh parsley, finely chopped (for garnish, optional)

Lemon wedges (for serving, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). This high temperature will help achieve that perfect caramelization on your cauliflower.

Prepare the Cauliflower: In a spacious mixing bowl, place the cauliflower florets. Make sure they are roughly the same size to ensure even cooking.

Make the Glaze: In a small mixing bowl, combine the olive oil, pure maple syrup, Dijon mustard, garlic powder, smoked paprika, sea salt, and freshly cracked black pepper. Whisk these ingredients together until they form a smooth, cohesive glaze.

Coat the Cauliflower: Drizzle the maple Dijon glaze over the cauliflower florets. Using your hands or a spatula, gently toss the florets until they are uniformly coated with the glaze, ensuring every piece gets a taste of that delicious mixture.

Spread on Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Transfer the coated cauliflower to the sheet, arranging them in a single layer. This will allow for optimal roasting and prevent steaming.

Roasting: Place the baking sheet in the preheated oven and roast the cauliflower for 25-30 minutes. Make sure to flip the florets halfway through the cooking time to achieve an even golden-brown color and deliciously caramelized edges.

Garnish and Serve: Once the cauliflower is tender and beautifully browned, remove the baking sheet from the oven. Let the roasted cauliflower cool slightly before transferring to a serving platter. If using, sprinkle freshly chopped parsley over the top for a touch of color. Serve with lemon wedges on the side, allowing guests to squeeze fresh lemon juice over the dish for an added zesty finish.
