Ingredients

1 lb (450g) medium-sized carrots, peeled and cut into uniform sticks

2 tablespoons extra virgin olive oil

2 tablespoons pure maple syrup

1 tablespoon Dijon mustard

1 teaspoon garlic powder

½ teaspoon sea salt

¼ teaspoon freshly cracked black pepper

Fresh thyme leaves, for garnish (optional)

Lemon wedges, for serving (optional)

Instructions

Preheat the oven: Start by preheating your oven to 425°F (220°C). To make cleanup easier, line a large baking sheet with parchment paper.

Prepare the carrots: In a large mixing bowl, add the peeled and cut carrot sticks. Aim to cut them into similar sizes to ensure they cook evenly.

Make the dressing: In a separate small bowl, combine the olive oil, maple syrup, Dijon mustard, garlic powder, sea salt, and black pepper. Whisk the ingredients together until they form a smooth and cohesive dressing.

Coat the carrots: Drizzle the maple Dijon dressing over the carrot sticks in the mixing bowl. Using your hands or a spoon, toss the carrots thoroughly to ensure they are well-coated by the flavorful mixture.

Arrange on the baking sheet: Spread the dressed carrots in a single layer on the prepared baking sheet. Make sure that there is space between each piece, which will help them roast evenly and achieve a nice caramelization.

Roast the carrots: Place the baking sheet in the preheated oven and roast the carrots for about 25 to 30 minutes. They should be tender and beautifully caramelized when finished. To promote even browning, stir the carrots halfway through the roasting time.

Garnish and serve: Once the carrots are done, take them out of the oven. For added flavor and a pop of color, sprinkle fresh thyme leaves over the top if desired. Serve the carrots warm with lemon wedges on the side, which provide a delightful tang that complements the sweetness.
