Ingredients

4 boneless, skinless chicken breasts

1/4 cup pure maple syrup

2 tablespoons Dijon mustard

2 tablespoons extra virgin olive oil (plus more for Brussels sprouts)

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

1 pound Brussels sprouts, trimmed and halved

1/4 teaspoon red pepper flakes (optional for heat)

Fresh parsley, chopped for garnish

Instructions

Prepare the Marinade: In a medium bowl, whisk together the maple syrup, Dijon mustard, 2 tablespoons of olive oil, apple cider vinegar, garlic powder, dried thyme, salt, and pepper until fully combined. Set aside 2 tablespoons of this marinade for glazing later.

Marinate the Chicken: In a shallow dish or resealable bag, place the chicken breasts and pour the remaining marinade over them. Ensure each breast is evenly coated. Cover the dish or seal the bag and refrigerate for at least 30 minutes to enhance the flavor, or up to 2 hours for an even richer taste.

Preheat the Oven: About 10 minutes before cooking, preheat your oven to 400°F (200°C) to ensure it’s hot when you add the Brussels sprouts.

Prepare the Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts with a drizzle of olive oil, salt, pepper, and, if desired, the red pepper flakes for a touch of spice. Toss until the sprouts are well coated. Spread them in a single layer on a baking sheet for even roasting.

Bake the Brussels Sprouts: Place the baking sheet in the preheated oven and roast the Brussels sprouts for 20-25 minutes until they are golden brown and crispy, stirring halfway through the cooking time to promote even browning.

Cook the Chicken: Heat a large skillet over medium-high heat. Remove the marinated chicken breasts from the marinade, allowing any excess to drip off. Sear the chicken in the skillet for 5-6 minutes on each side, until golden brown and fully cooked through (the internal temperature should reach 165°F or 75°C).

Glaze the Chicken: In the final minutes of cooking, brush the reserved marinade over the chicken. Allow it to caramelize slightly in the pan, creating a rich glaze.

Serve: Once everything is cooked, plate the chicken breasts alongside a generous serving of crispy Brussels sprouts. Drizzle with any remaining glaze for added flavor and garnish with freshly chopped parsley for a vibrant touch.

Enjoy: This delicious dish pairs perfectly with a side of fluffy quinoa or nutty wild rice to round out your meal!
