Mango Pineapple Salsa Chicken

For the Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper, to taste

For the Mango Pineapple Salsa:

1 ripe mango, diced into small cubes

1 cup fresh pineapple, diced into small cubes

1/2 red onion, finely chopped

1 jalapeño pepper, seeded and minced (optional for added heat)

1/4 cup fresh cilantro, finely chopped

Juice of 1 lime (about 2 tablespoons)

Salt, to taste

Instructions
 

Prepare the Chicken:

    - In a mixing bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Whisk well to create a marinade.

      - Place the chicken breasts in a shallow dish and pour the marinade over them, ensuring each piece is completely coated. Let the chicken marinate for at least 10 minutes for better flavor absorption.

        Cook the Chicken:

          - Preheat your grill or grill pan over medium-high heat. Once hot, carefully place the marinated chicken breasts on the grill.

            - Grill the chicken for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has developed beautiful grill marks. Once cooked, remove from the grill and allow it to rest for 5 minutes before slicing.

              Make the Salsa:

                - While the chicken is resting, prepare the salsa. In a medium mixing bowl, combine the diced mango, pineapple, chopped red onion, minced jalapeño (if using), cilantro, lime juice, and a pinch of salt.

                  - Gently toss all the ingredients together until well mixed, tasting to adjust the seasoning as desired.
