2 ripe mangoes, peeled and diced

2 ripe peaches, pitted and diced

2 tablespoons honey or maple syrup (adjust to taste)

1 tablespoon fresh lemon juice

1/2 teaspoon ground ginger (optional for a touch of warmth)

Prep the Fruit: In a high-powered blender or food processor, combine the diced mangoes and peaches. Blend the mixture until it reaches a smooth consistency. For added texture, you can blend partially, leaving a few small chunks.

    Sweeten the Mixture: Once blended, add honey or maple syrup, fresh lemon juice, ground ginger (if using), and a pinch of salt to the fruit puree. Blend again until all elements are thoroughly mixed and smooth.

      Prepare the Baking Sheet: Line a large baking sheet with parchment paper or a silicone baking mat, ensuring even coverage to prevent sticking.

        Pour and Spread: Carefully pour the fruit mixture onto the lined baking sheet. Using a spatula, spread the mixture into an even layer, approximately 1/8-inch thick. Ensuring even thickness will promote consistent drying.

          Dehydrate: Preheat your oven to its lowest setting (typically around 140°F or 60°C). Place the baking sheet in the oven and slightly prop the door open using a wooden spoon to facilitate moisture escape.

            Dry the Leather: Allow the fruit mixture to dehydrate for 6 to 8 hours. Check intermittently; the fruit leather is properly dried once it feels firm, no longer tacky, and can be easily peeled away from the parchment.

              Cool and Cut: Once fully dried, remove the baking sheet from the oven and let the fruit leather cool completely. Use kitchen scissors or a sharp knife to cut into strips of your desired size.

                Store Properly: Roll each strip carefully in parchment paper and place them into an airtight container. With proper storage, these fruit leathers can last up to a month!
