Luscious Mango Coconut Popsicles

2 ripe mangoes, peeled and diced

1 cup coconut milk (preferably full-fat canned for creaminess)

2 tablespoons honey or maple syrup (adjust based on desired sweetness)

1/2 teaspoon vanilla extract

A pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Mango: Begin by placing the diced mangoes into a blender. Blend on high speed until the mixture is completely smooth. If you enjoy a bit of texture in your popsicles, set aside a few mango pieces to stir in later.

    Mix the Coconut Base: In a separate mixing bowl or container, combine the creamy coconut milk with honey (or maple syrup), vanilla extract, and a pinch of salt. Whisk together until the mixture is well integrated and smooth.

      Layer the Mixtures: Take your popsicle molds and begin layering the mixtures. Pour in a generous layer of the mango puree first, then add a layer of the coconut mixture on top. Repeat this process, alternating layers until the molds are nearly full, allowing a small gap at the top for expansion during freezing.

        Add Fresh Pieces (Optional): If you saved some diced mango from earlier, carefully drop those pieces into the molds at various levels for added flavor and a delightful surprise in each bite.

          Insert Sticks & Freeze: Take wooden popsicle sticks and gently insert them into each mold, making sure they are centered. Place the molds in the freezer and allow them to freeze for at least 4 to 6 hours, or until the popsicles are completely solid.

            Unmold & Serve: Once frozen, to easily release the popsicles from the molds, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove the popsicles and serve them right away.

              Garnish (Optional): For an extra touch, garnish with fresh mint leaves placed atop each popsicle for a splash of color and a refreshing scent.
