Ingredients

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon chili powder

Salt and freshly ground black pepper, to taste

1 cup cooked and crumbled turkey or beef (optional for extra protein)

1 cup black beans, drained and rinsed

1 cup shredded cheddar cheese (or a dairy-free alternative)

1/2 cup diced fresh tomatoes

1/4 cup sliced jalapeños (either pickled or fresh, for a kick)

1/4 cup chopped green onions

1/2 cup sour cream or Greek yogurt (or a dairy-free option)

1/4 cup fresh cilantro, chopped

Lime wedges, for serving

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Prepare a large baking sheet by lining it with parchment paper to prevent sticking.

Prepare Sweet Potatoes: Thoroughly wash and peel the sweet potatoes. Cut them into uniform fry-shaped pieces, aiming for about 1/4 inch thick to ensure even cooking.

Season the Fries: In a spacious mixing bowl, combine the sweet potato fries with olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper. Toss everything together until the fries are well-coated with the seasoning mixture.

Bake the Fries: Spread the seasoned sweet potato fries in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, flipping the fries halfway through the cooking time. They should turn golden and crispy.

Layer Toppings: Once the fries are beautifully cooked and crisp, remove them from the oven. Evenly layer the cooked and crumbled turkey or beef (if using), black beans, and shredded cheddar cheese over the fries.

Melt the Cheese: Pop the loaded fries back into the oven for another 5-7 minutes, or until the cheese has melted and is bubbling delightfully.

Add Fresh Toppings: Carefully take the nacho fries out of the oven. Decorate them with fresh diced tomatoes, sliced jalapeños, and chopped green onions. Finish with a generous drizzle of sour cream or Greek yogurt.

Garnish and Serve: Sprinkle the top with freshly chopped cilantro for a burst of flavor. Serve the loaded fries hot with lime wedges on the side for an extra zest that complements the dish beautifully.
