Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Juice and zest of 1 lemon

4 large whole-grain wraps or tortillas

1 cup fresh spinach or mixed greens

½ cup diced cucumber

½ cup sliced cherry tomatoes

¼ cup crumbled feta cheese (optional)

Hummus or tzatziki, for spreading

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the chickpeas.

Prepare Chickpeas: Place the drained chickpeas on a clean kitchen towel and gently pat them dry to remove excess moisture. This step is crucial for achieving crispiness during roasting.

Season Chickpeas: In a mixing bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, dried oregano, salt, black pepper, fresh lemon juice, and zest. Add the dried chickpeas to this flavorful mixture and toss until all chickpeas are thoroughly coated in the seasoning.

Roast Chickpeas: Line a baking sheet with parchment paper to prevent sticking. Spread the seasoned chickpeas in a single layer on the sheet. Roast in the preheated oven for approximately 25-30 minutes, or until they are golden brown and crispy, stirring halfway through to ensure even cooking.

Assemble the Wraps: After removing the chickpeas from the oven, let them cool for a few minutes. Lay out your whole-grain wraps and spread a generous layer of hummus or tzatziki over each wrap for added flavor.

Layer the Filling: On each wrap, start with a handful of fresh spinach or mixed greens, followed by the diced cucumber, sliced cherry tomatoes, and a generous scoop of the roasted chickpeas. If desired, sprinkle crumbled feta cheese on top for a salty, tangy finish.

Wrap It Up: Fold in the sides of each wrap to contain the filling, then roll tightly from the bottom to the top to form a secure wrap. If necessary, use a toothpick to hold the wrap together or wrap it in foil for easier transport.

Serve: Slice the wraps in half for serving and enjoy immediately, or pack them for a delicious and nutritious lunch on the go.
