Ingredients

1 lb (450g) chicken tenders

2 tablespoons olive oil

Zest and juice of 2 large lemons

4 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon honey (optional, for a hint of sweetness)

Lemon wedges and fresh herbs for garnish (optional)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and honey (if adding) until the mixture is smooth and well combined.

Marinate the Chicken: Place the chicken tenders in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that each tender is thoroughly coated. Seal the bag or cover the dish with plastic wrap and refrigerate for a minimum of 30 minutes to 2 hours for optimal flavor. For best results, marinate overnight.

Preheat the Grill: Set your grill to medium-high heat, aiming for approximately 400°F (200°C) to ensure a perfect sear on the chicken.

Grill the Chicken: Remove the chicken tenders from the marinade, allowing any excess marinade to drain off (set aside the marinade for later, if desired). Place the tenders directly onto the hot grill grates. Grill each side for about 4-5 minutes, or until the chicken is thoroughly cooked with beautiful grill marks. The internal temperature should reach 165°F (75°C).

Sauce It Up (Optional): While the chicken is cooking, transfer the reserved marinade to a small saucepan. Simmer it over medium heat until it thickens slightly, creating a delicious drizzle to serve over the grilled chicken.

Rest and Serve: Once cooked, transfer the chicken from the grill to a platter and let it rest for 5 minutes to retain its juices. Serve the grilled chicken tenders garnished with lemon wedges and fresh herbs. They can be enjoyed as a main dish or sliced and added to salads or wraps.
