Ingredients

8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

3 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

Zest of 1 bright lemon

Juice of 1 fresh lemon

1 teaspoon red pepper flakes (adjust for desired heat level)

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, roughly chopped

Salt and freshly ground black pepper to taste

Freshly grated Parmesan cheese (for serving)

Instructions

Cook the Pasta:

    - In a large pot, bring salted water to a boil. Once boiling, add the spaghetti or linguine. Cook according to package instructions until al dente, usually about 8-10 minutes. Before draining, reserve 1 cup of the starchy pasta water; then drain the pasta and set aside.

      Sauté the Shrimp:

        - Heat a large skillet over medium-high heat. Add the olive oil, letting it warm up. Once the oil is shimmering, introduce the minced garlic and red pepper flakes. Sauté for approximately 30 seconds, stirring frequently, until the garlic is fragrant but not browned.

          Add the Shrimp:

            - Place the shrimp in the skillet in a single layer. Cook for 2-3 minutes until the shrimp turn a lovely pink and opaque. Flip them halfway through cooking for even cooking. Season with salt and freshly cracked black pepper to your liking.

              Combine Ingredients:

                - Stir in the halved cherry tomatoes, lemon zest, and lemon juice into the skillet with the shrimp. Mix well and allow the mixture to simmer for an additional 2 minutes or until the tomatoes soften just a bit and release their juices.

                  Mix with Pasta:

                    - Add the drained pasta directly into the skillet with the shrimp and tomato mixture. Pour in about 1/4 cup of the reserved pasta water and toss everything together gently until fully combined. If the pasta seems dry, slowly incorporate more of the reserved water until you achieve your desired creaminess.

                      Finish and Serve:

                        - Remove the skillet from heat and fold in the chopped parsley. Taste and adjust the seasoning if necessary, adding more salt, pepper, or lemon juice as preferred. Serve the pasta hot, generously topped with freshly grated Parmesan cheese.
