1 lb large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

3 tablespoons olive oil, separated

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and freshly ground black pepper, to taste

1 cup cooked quinoa or rice, for serving

Fresh parsley or cilantro, finely chopped, for garnish

Lemon wedges, for serving

Prepare the Ingredients: Begin by rinsing the shrimp thoroughly under cold water and then patting them dry using paper towels. Next, prepare the asparagus by trimming the tough ends and cutting it into 2-inch pieces. If you haven't already cooked the quinoa or rice, do so according to package instructions and set aside.

    Marinate the Shrimp: In a medium mixing bowl, combine the peeled shrimp with 1 tablespoon of olive oil, the minced garlic, lemon zest, lemon juice, red pepper flakes, salt, and black pepper. Toss the shrimp until each piece is evenly coated in the marinade. Allow the shrimp to marinate for 15 minutes to soak up all the flavors while you prepare the asparagus.

      Sauté the Asparagus: Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Once the oil is shimmering, add the asparagus pieces and sauté for 3-4 minutes, or until the asparagus turns bright green and is tender-crisp. Carefully remove the sautéed asparagus from the skillet and set aside on a plate.

        Cook the Shrimp: In the same skillet, raise the heat to medium-high and add the remaining tablespoon of olive oil. Once hot, add the marinated shrimp to the pan in a single layer. Do not stir the shrimp for the first 2-3 minutes to allow for a beautiful sear to form. Once they turn pink on the bottom, flip the shrimp and continue to cook for another 2-3 minutes, or until all the shrimp are fully cooked and opaque.

          Combine and Warm: After the shrimp have cooked, add the sautéed asparagus back into the skillet with the shrimp. Toss all the ingredients together gently to combine and heat the asparagus slightly. Taste and adjust the seasoning if necessary, adding more salt, pepper, or lemon juice according to your preference.
