Ingredients

2 pounds baby potatoes, halved or quartered

1/2 cup plain Greek yogurt

1/4 cup mayonnaise

2 tablespoons fresh lemon juice (approximately the juice of 1 lemon)

1 teaspoon fresh lemon zest

2 tablespoons fresh dill, chopped (plus extra for garnish)

2 tablespoons red onion, finely chopped

1 tablespoon Dijon mustard

Salt and pepper to taste

Optional: 1 cup cherry tomatoes, halved

Instructions

Cook the Potatoes: In a large pot, add the halved or quartered baby potatoes and cover them with water. Sprinkle in a pinch of salt and bring the water to a boil over medium-high heat. Once boiling, reduce the heat to low and let the potatoes simmer for about 10-15 minutes. Cook until the potatoes are tender yet firm when pierced with a fork. After cooking, drain the potatoes thoroughly and set them aside to cool completely.

Prepare the Dressing: In a large mixing bowl, combine the plain Greek yogurt, mayonnaise, fresh lemon juice, lemon zest, chopped dill, finely chopped red onion, Dijon mustard, and a generous pinch of salt and pepper. Use a whisk to mix these ingredients until you achieve a smooth and creamy dressing.

Mix It Together: When the potatoes have cooled, carefully fold them into the dressing mixture using a spatula or large spoon. Make sure the potatoes are well coated with the dressing. If you're adding cherry tomatoes, gently incorporate them at this stage, being careful not to break them apart.

Chill: After mixing, cover the potato salad with plastic wrap or a lid and place it in the refrigerator for at least 30 minutes. This chilling time allows the flavors to meld beautifully, making the salad even more delicious!

Serve: When you're ready to serve, give the potato salad a gentle stir. Taste and adjust the seasoning with more salt and pepper if needed. Garnish the salad with additional fresh dill for a pop of color and flavor. Enjoy this refreshing lemon dill potato salad as a perfect side dish!
