1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup fresh lemon juice (approximately 2 medium lemons)

1 tablespoon lemon zest (from 1 lemon)

3 tablespoons extra virgin olive oil

2 tablespoons fresh dill, finely chopped (or 1 tablespoon dried dill)

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 teaspoon paprika (optional, adds a smoky flavor)

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes before use)

Instructions
 

Prepare the Marinade: In a large mixing bowl, whisk together the fresh lemon juice, lemon zest, olive oil, chopped dill, minced garlic, salt, black pepper, and paprika (if using). Ensure all the ingredients are combined thoroughly to create a flavorful marinade.

    Marinate the Chicken: Add the cubed chicken to the bowl with the marinade. Use a spatula or your hands to mix the chicken thoroughly, ensuring each piece is evenly coated. Cover the bowl with plastic wrap, and let the chicken marinate in the refrigerator for at least 30 minutes or up to 2 hours for enhanced flavor and tenderness.
