Ingredients

4 salmon fillets (6 oz each)

2 tablespoons olive oil

3 tablespoons unsalted butter, melted

2 tablespoons fresh lemon juice

Zest of 1 lemon

3 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)

1 teaspoon dried parsley (or 1 tablespoon fresh parsley, chopped)

1 cup cherry tomatoes, halved

1 lemon, thinly sliced into rounds

Fresh parsley, for garnish (optional)

Aluminum foil

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it’s ready for baking.

Prepare the Foil: Cut four pieces of aluminum foil, each measuring approximately 12 inches in length. Lay them flat on a clean surface, ensuring they are ready for assembly.

Mix the Seasoning: In a medium-sized bowl, combine the melted unsalted butter, olive oil, fresh lemon juice, lemon zest, minced garlic, dried thyme, dried parsley, and a pinch of salt and pepper. Whisk together until well blended and fragrant.

Assemble the Foil Packs: Place one salmon fillet in the center of each piece of foil. Generously drizzle the lemon butter mixture over each fillet. Scatter the halved cherry tomatoes around the salmon and lay a few lemon slices on top for added flavor and aroma.

Seal the Packs: Carefully fold the sides of the aluminum foil over the salmon and tomatoes. Then, fold the top and bottom edges to create a secure seal, ensuring no juices can escape; this will help steam the salmon as it bakes.

Bake: Position the foil packs on a baking sheet and place them in the preheated oven. Bake for about 15-20 minutes, or until the salmon is cooked through—it should flake easily with a fork when done.

Serve with Care: Once baked, carefully open the foil packs to avoid steam burns. If desired, sprinkle some freshly chopped parsley over the top for a burst of color and freshness. You can either serve the salmon directly in the foil for a rustic presentation or transfer to plates for a more polished look.
