Ingredients

1 cup rolled oats

1 cup almond milk (or any milk of your choice)

1/2 cup plain or vanilla Greek yogurt

1 tablespoon maple syrup (or honey)

Zest of 1 lemon

2 tablespoons fresh lemon juice

1/2 teaspoon vanilla extract

1/2 cup fresh blueberries (plus extra for topping)

A pinch of salt

Optional toppings: sliced almonds, chia seeds, or coconut flakes

Instructions

Start by adding the rolled oats and a pinch of salt into a medium-sized mixing bowl. Stir them together briefly to ensure the salt is evenly distributed.

In a separate mixing bowl, whisk together the almond milk, Greek yogurt, maple syrup, lemon zest, lemon juice, and vanilla extract. Continue whisking until the mixture is smooth and well-combined, ensuring there are no lumps.

Pour the wet mixture over the oats. Stir the combination gently but thoroughly, making sure all the oats are coated in the liquid mixture.

Gently fold in the fresh blueberries, taking care to distribute them evenly throughout the oat mixture without crushing them.

Spoon the mixture evenly into individual serving jars or containers. Ensure each jar is sealed tightly with its lid.

Place the sealed jars in the refrigerator, allowing them to chill overnight, or for a minimum of 4 hours. This step is crucial for the oats to soak up the delicious flavors and achieve a creamy texture.

When you’re ready to enjoy your breakfast, take the jars out of the refrigerator and give the oats a good stir. If you desire a creamier consistency, add a splash of milk at this stage and mix well.

Finish by topping your oats with extra blueberries, a sprinkle of sliced almonds, chia seeds, or coconut flakes. This will add a delightful crunch and enhance the flavor of your dish.
