Ingredients

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, melted and slightly cooled

2 large eggs

1 teaspoon vanilla extract

Zest of 1 large lemon (about 1 tablespoon)

1/4 cup fresh lemon juice (from about 1 large lemon)

1 cup fresh or frozen blueberries

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a mini muffin tin by lining it with paper liners or lightly greasing it with non-stick cooking spray to prevent sticking.

Combine Dry Ingredients: In a large mixing bowl, sift together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk until these dry ingredients are well combined and airy.

Mix Wet Ingredients: In a separate bowl, whisk together the melted butter (make sure it's not too hot), eggs, vanilla extract, lemon zest, and fresh lemon juice. Mix until the mixture is smooth and well blended.

Combine Mixtures: Gently pour the wet ingredients into the bowl containing the dry ingredients. Stir with a spatula or wooden spoon just until everything is combined. Note: It’s perfectly fine if the batter has a few lumps; overmixing can lead to dense muffin bites.

Add Blueberries: Carefully fold in the blueberries using a spatula, ensuring they are evenly distributed without breaking them apart too much.

Fill Muffin Tin: Use a spoon or a small ice cream scoop to evenly fill each muffin cup about three-quarters full with the batter. This will give them room to rise while baking.

Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes. They're ready when a toothpick inserted into the center of a muffin comes out clean or with just a few crumbs attached.

Cool: After baking, let the muffin bites cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely. This ensures they won’t become soggy.

Dust with Sugar (Optional): If desired, once the muffin bites are completely cool, lightly dust them with powdered sugar for an extra flair and a touch of sweetness.

Serve and Enjoy: These delightful muffin bites are perfect either warm out of the oven or at room temperature. Enjoy them as a tasty snack, breakfast treat, or a sweet addition to brunch!
