Ingredients

1 pound ground beef (or substitute with ground turkey for a leaner option)

1 cup fresh breadcrumbs (homemade or store-bought)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped green onions (both white and green parts)

2 cloves garlic, minced (about 2 teaspoons)

1 large egg (room temperature)

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 teaspoon ground ginger (or 1 tablespoon fresh ginger, grated)

1 cup teriyaki sauce (store-bought or homemade)

1 cup fresh pineapple chunks (cut into bite-sized pieces)

Sesame seeds (for garnish)

Fresh cilantro or parsley (chopped, for garnish)

Instructions

Preheat the Oven:

Start by preheating your oven to 400°F (200°C). To make cleanup easier, line a baking sheet with parchment paper.

      Prepare the Meatball Mixture:

In a large mixing bowl, combine the ground beef (or turkey), fresh breadcrumbs, grated Parmesan cheese, finely chopped green onions, minced garlic, egg, salt, black pepper, and ground ginger. Mix the ingredients with your hands until everything is well incorporated, being careful not to overmix to keep the meatballs tender.

          Form the Meatballs:

Shape the mixture into small meatballs, about 1-inch in diameter, rolling them gently between your palms to create a smooth surface. Place the meatballs on the prepared baking sheet, spacing them evenly apart to allow for even cooking.

              Bake the Meatballs:

Bake the meatballs in the preheated oven for approximately 15 minutes, or until they are golden brown on the outside and cooked through (ensure the internal temperature reaches 165°F or 74°C).

                  Prepare the Teriyaki Sauce:

While the meatballs are baking, pour the teriyaki sauce into a medium saucepan. Heat it over medium heat, bringing it to a gentle simmer.

                      Add Pineapple:

Once the teriyaki sauce is simmering, add the pineapple chunks. Allow them to cook in the sauce for about 3-4 minutes, or until they are warmed through and begin to caramelize slightly.

                          Combine Meatballs and Sauce:

After the meatballs have finished baking, carefully transfer them into the saucepan with the teriyaki sauce and pineapple. Gently toss the meatballs in the sauce until they’re thoroughly coated.

                              Serve:

Spoon the teriyaki meatballs onto a serving platter. For an appealing finish, garnish with a sprinkle of sesame seeds and a handful of freshly chopped cilantro or parsley to add color and flavor.

                                  Enjoy:

Serve these delectable pineapple teriyaki meatballs over a bed of steamed rice, quinoa, or noodles for a satisfying meal that everyone will love!
