2 pounds boneless pork shoulder or pork loin

8 small corn or flour tortillas

1 cup diced pineapple (fresh or canned)

1/2 red onion, finely chopped

1 ripe avocado, sliced

1 cup cucumber, diced

Fresh cilantro leaves for garnishing

Lime wedges, for serving

Prepare the Mojo Marinade: In a spacious mixing bowl, combine the fresh orange juice, lime juice, minced garlic, chopped cilantro, ground cumin, dried oregano, smoked paprika, and red pepper flakes.     Marinate the Pork: Place the pork shoulder or loin in a resealable plastic bag or a shallow dish. Pour the prepared marinade over the pork, ensuring it is completely coated.
