Ingredients

1 lb chicken breast tenders

1/2 cup honey

1/4 cup Dijon mustard

1/4 cup whole grain mustard

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper to taste

1 cup all-purpose flour

2 large eggs, beaten

2 cups panko bread crumbs

1/4 cup olive oil (for cooking)

Instructions

Prepare the Marinade: In a medium mixing bowl, combine the honey, Dijon mustard, whole grain mustard, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Whisk until smooth and well blended. Set aside 1/4 cup of this mixture to use as a dipping sauce later.

Marinate the Chicken: Place the chicken tenders in a large resealable plastic bag or a shallow dish. Pour the remaining marinade over the chicken, ensuring that all pieces are evenly coated. Seal the bag or cover the dish with plastic wrap, then refrigerate for at least 30 minutes or up to 2 hours for enhanced flavor.

Set Up the Breading Station: Prepare three shallow dishes: fill the first with flour, the second with the beaten eggs, and the third with panko bread crumbs. Season the flour with a small amount of salt and pepper to taste.

Bread the Chicken: Remove the marinated chicken from the refrigerator. Working with one tender at a time, dredge it in the flour, shaking off any excess. Next, dip the chicken in the beaten eggs, ensuring it is fully coated. Finally, roll the tender in the panko bread crumbs, pressing gently to help the crumbs adhere well.

Cook the Chicken Tenders: In a large skillet, heat the olive oil over medium heat until shimmering. Add the breaded chicken tenders in batches, avoiding overcrowding the pan. Cook for approximately 4-5 minutes on each side, or until they are golden brown and cooked through, with an internal temperature of 165°F.

Serve and Enjoy: Once cooked, transfer the chicken tenders to a plate lined with paper towels to absorb any excess oil. Serve the tenders hot alongside the reserved honey mustard dipping sauce for a delightful treat.
