1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 tablespoon honey

Juice of 2 limes

Zest of 1 lime

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 bell pepper (any color: red, yellow, or green), sliced into thin strips

1 medium onion, sliced

Tortillas (flour or corn, for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Optional toppings: diced avocado, sour cream, salsa, shredded cheese

Instructions
 

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, honey, lime juice, lime zest, chili powder, cumin, garlic powder, onion powder, salt, and black pepper until well blended. Add the sliced chicken strips to the bowl, ensuring they are thoroughly coated in the marinade. Cover the bowl with plastic wrap or a lid and refrigerate to marinate for at least 30 minutes, or up to 2 hours for maximum flavor.

    Prepare the Vegetables: While the chicken marinates, wash and slice the bell pepper and onion into thin strips. Set the prepared vegetables aside in a bowl.

      Cook the Chicken: Heat a large skillet or frying pan over medium-high heat. Once hot, add the marinated chicken strips to the pan along with any leftover marinade. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and reaches an internal temperature of 165°F (75°C). Once fully cooked, remove the chicken from the pan and transfer it to a plate, keeping it warm.

        Sauté the Vegetables: In the same skillet, add the sliced bell pepper and onion. Sauté for 3-4 minutes, stirring frequently, until the vegetables are tender yet still crisp.

          Combine and Heat Through: Return the cooked chicken to the skillet with the sautéed vegetables. Toss everything together and cook for an additional 2 minutes to ensure the mixture is heated through and the flavors meld.

            Serve: Warm the tortillas by placing them in a separate skillet for about 30 seconds on each side or in the microwave for 15-20 seconds.
