Ingredients

2 medium acorn squashes

4 tablespoons unsalted butter, melted

¼ cup honey

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon salt

¼ teaspoon freshly ground black pepper

1 tablespoon extra virgin olive oil

Fresh thyme leaves for garnish (optional)

Chopped pecans or walnuts for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This ensures that the squash roasts evenly and develops a beautiful caramelization.

Prepare the Squash: Carefully cut the acorn squashes in half lengthwise. Use a spoon to scoop out the seeds and any stringy fibers from the center. If the squashes are difficult to cut, place them in the microwave for 2-3 minutes to soften the skin slightly, making them easier to handle.

Make the Honey Butter Mixture: In a mixing bowl, combine the melted butter, honey, ground cinnamon, ground nutmeg, salt, and black pepper. Whisk together until the mixture is smooth and fully integrated.

Coat the Squash: Place the acorn squash halves, cut side facing up, on a baking sheet lined with parchment paper for easy cleanup. Drizzle a tablespoon of olive oil over each half and use your fingers to rub it in, ensuring an even coating. Next, spoon the honey butter mixture generously over the surface of each squash half, making sure to coat every nook and cranny.

Roast the Squash: Transfer the baking sheet to the preheated oven. Roast the squash for 25-30 minutes, or until it is tender and has taken on a lovely caramel color. You can test for doneness by inserting a fork into the flesh; it should slide in easily when the squash is perfectly cooked.

Garnish: Once the squash is done roasting, remove it from the oven and allow it to cool for a few minutes. For an extra touch, sprinkle fresh thyme leaves and chopped pecans or walnuts over each half, adding texture and a lovely herbal note.

Serve: Present the roasted acorn squash warm, either as a delightful side dish or as a light main course. Savor the harmonious blend of sweet and savory flavors!
