Ingredients

For the Chicken Stew:

2 lbs chicken thighs, boneless and skinless, cut into bite-sized pieces

1 medium onion, finely diced

3 cloves garlic, minced

4 medium carrots, peeled and sliced

3 celery stalks, diced

4 cups chicken broth (homemade or low-sodium)

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and black pepper to taste

2 tablespoons olive oil

1 tablespoon butter

For the Dumplings:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon dried basil

1 teaspoon dried parsley

½ teaspoon salt

1 cup buttermilk (or milk with a splash of vinegar)

2 tablespoons butter, melted

Fresh parsley, chopped, for garnish

Instructions

Sauté the Chicken:

In a large pot or Dutch oven, heat the olive oil and butter over medium heat. Once the fat is shimmering, add the diced onion and minced garlic. Sauté for 3-4 minutes, stirring occasionally, until the onion turns translucent and fragrant.

      Brown the Chicken:

Add the bite-sized pieces of chicken to the pot, seasoning them with salt and black pepper. Cook for 6-7 minutes, stirring frequently, until the chicken is nicely browned on all sides.

          Add Vegetables and Broth:

Stir in the sliced carrots and diced celery, followed by the chicken broth. Add the dried thyme, rosemary, and bay leaf. Increase heat to bring the mixture to a gentle simmer. Cover the pot and cook for about 20 minutes, or until the vegetables are tender and the chicken is fully cooked through.

              Make the Dumpling Dough:

In a mixing bowl, whisk together the flour, baking powder, dried basil, dried parsley, and salt. Mix until evenly combined. Gradually stir in the buttermilk and melted butter, just until combined. Be careful not to overmix; the dough should remain slightly lumpy for light and fluffy dumplings.

                  Incorporate Peas:

After the stew has simmered for 20 minutes, stir in the frozen peas and let them cook for an additional 5 minutes. Remember to remove the bay leaf for a smoother eating experience.

                      Cook the Dumplings:

Using a spoon, drop generous spoonfuls (about 2 tablespoons each) of the dumpling batter on top of the bubbling chicken stew. Cover the pot tightly and allow the dumplings to steam for 15-20 minutes, or until they are fluffy and cooked through.

                          Serve:

Once the dumplings are done, carefully ladle the hearty chicken stew into bowls. Garnish with freshly chopped parsley for a burst of color and flavor. Serve hot and enjoy the comforting warmth of this cozy meal!
