1 can (28 oz) crushed tomatoes

4 cups vegetable broth (low-sodium recommended)

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper (adjust to taste)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 cup corn (preferably fresh, but frozen or canned will work)

1 cup sharp cheddar cheese, shredded

Fresh cilantro or sliced green onions for garnish (optional)

If there's any excess water after cooking, drain it before adding the lentils to the chili.

Then, incorporate the minced garlic along with the bell pepper, carrots, and celery. Continue to sauté for an additional 5-7 minutes until the vegetables are softened.

      Add Spices: Mix in the chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Allow the spices to cook for 1-2 minutes, stirring constantly, until they become aromatic.
