Hearty Lentil and Sausage Stew

1 cup green or brown lentils, thoroughly rinsed

1 pound Italian sausage (choose mild or spicy based on your preference), casings removed

1 medium onion, finely diced

2 cloves garlic, minced

2 medium carrots, peeled and diced

2 celery stalks, diced

1 bell pepper (red or green), diced

1 can (14 oz) diced tomatoes in juice

4 cups vegetable or chicken broth

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon ground cumin

Salt and freshly cracked pepper, to taste

2 cups kale or spinach, chopped (optional)

Fresh parsley, chopped, for garnish

Instructions
 

Sauté the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the Italian sausage, breaking it apart with a wooden spoon. Cook for about 5-7 minutes, or until the sausage is well browned and cooked through. Remove the sausage with a slotted spoon and set it aside, leaving the flavorful rendered fat in the pot.

    Cook the Vegetables: Add the diced onion, carrots, and celery to the pot with the sausage fat. Sauté over medium heat for approximately 5 minutes, or until the vegetables begin to soften. Stir in the diced bell pepper and minced garlic, and cook for an additional 2-3 minutes, until the garlic is aromatic and the bell pepper softens.

      Add Lentils and Spices: Incorporate the rinsed lentils into the vegetable mixture. Sprinkle in the dried thyme, smoked paprika, cumin, and a pinch of salt and pepper. Stir everything together until the lentils are well mixed with the vegetables and spices.

        Combine with Broth and Tomatoes: Pour in the diced tomatoes (including their juices) and the broth of your choice. Stir to combine all ingredients and bring the mixture to a vigorous boil. Once boiling, reduce the heat to low and allow it to simmer gently.

          Simmer the Stew: Cover the pot with a lid and let the stew simmer for about 25-30 minutes, or until the lentils are tender and cooked through. Stir occasionally to ensure nothing sticks to the bottom.
