1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup pure maple syrup or honey

2 tablespoons matcha green tea powder

1/4 cup chia seeds

1/4 cup unsweetened shredded coconut

1/2 teaspoon vanilla extract

Pinch of sea salt

Optional: 1/4 cup dark chocolate chips or dried fruit (such as cranberries or goji berries) for added flavor

Instructions
 

Mix Dry Ingredients: In a medium-sized mixing bowl, combine the rolled oats, matcha green tea powder, chia seeds, unsweetened shredded coconut, and a pinch of sea salt. Use a whisk or spoon to stir the ingredients together until the matcha is evenly distributed throughout the mixture.

    Combine Wet Ingredients: In a separate bowl, mix together the almond butter, pure maple syrup (or honey), and vanilla extract. Whisk until you achieve a smooth consistency. If your almond butter is particularly thick or difficult to mix, you can microwave it for 10-15 seconds to make it easier to blend.

      Combine Mixtures: Pour the smooth almond butter mixture into the bowl containing the dry ingredients. Stir thoroughly until all components are well-combined and coated. If you're using optional ingredients like dark chocolate chips or dried fruit, fold them into the mixture at this point.

        Form the Bites: With clean hands, scoop out about a tablespoon of the mixture and roll it into a small ball. Place each rolled energy bite onto a parchment-lined tray or baking sheet. Continue this process until all of the mixture has been formed into bites.
