Prep the Veggies: In a medium-sized skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the chopped spinach, diced bell pepper, and grated zucchini. Sauté the mixture for about 3-4 minutes, stirring occasionally, until the veggies are tender but still vibrant in color.

    Mix in Corn and Seasoning: Stir in the corn kernels and sprinkle the taco seasoning (if using) over the vegetable mixture. Mix well to combine all ingredients and cook for an additional 1-2 minutes until everything is heated through and the flavors meld together. Remove the pan from heat and allow the mixture to cool slightly.

      Assemble the Quesadillas: Place two tortillas on a clean surface. On each tortilla, generously sprinkle half of the shredded cheese.
