1 lb (450g) lean ground beef

1 can (15 oz) black beans, thoroughly rinsed and drained

1 medium onion, finely diced

3 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon taco seasoning (or homemade blend: 1 teaspoon chili powder, 1 teaspoon cumin, 1 teaspoon paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, and ½ teaspoon salt)

1 cup diced tomatoes (fresh or canned, drained if using canned)

1 cup corn kernels (fresh or frozen)

Salt and pepper to taste

Juice of 1 lime

8 small corn or whole wheat tortillas

Optional toppings: sliced avocado, fresh cilantro leaves, diced red onion, your favorite salsa, shredded lettuce, and cheese (use vegan cheese for a dairy-free option)

Instructions
 

Cook the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing for about 2-3 minutes until the onion becomes soft and translucent, and the garlic is fragrant (be careful not to let the garlic burn).

    Brown the Beef: Add the ground beef to the skillet. Using a spatula, break it apart into smaller pieces. Cook for approximately 5-7 minutes, stirring occasionally, until the beef is browned and cooked through. If there is excess fat, drain it before continuing.

      Incorporate Flavor: Add the taco seasoning, diced tomatoes, corn, and black beans to the skillet. Stir everything together until evenly combined. Let it simmer for about 5-7 minutes, allowing all the flavors to meld beautifully.

        Season to Taste: After cooking, taste the mixture and adjust seasoning with salt, pepper, and freshly squeezed lime juice according to your preference. Remove the skillet from heat.

          Warm the Tortillas: To prepare the tortillas, heat a dry skillet over medium heat. Warm each tortilla for about 30 seconds on each side until they are soft and pliable. Alternatively, you can wrap them in foil and heat them in a preheated oven at 350°F (175°C) for 5-10 minutes.

            Assemble Your Tacos: Place a generous spoonful of the beef and black bean mixture onto each tortilla. Top with your choice of sliced avocado, fresh cilantro, diced red onion, salsa, shredded lettuce, and cheese.
