2 large boneless, skinless chicken breasts

1 cup of your favorite BBQ sauce (preferably low-sugar)

2 medium sweet potatoes, peeled and cut into thin strips

1 tablespoon olive oil

½ teaspoon garlic powder

Salt and pepper to taste

4 whole wheat tortillas

2 cups baby spinach or mixed greens

½ cup shredded red cabbage (for crunch)

1 avocado, sliced

Instructions
 

Prepare the Sweet Potatoes:

    - Preheat your oven to 425°F (220°C).

            Cook the Chicken:

              - While the sweet potatoes bake, pat the chicken breasts dry and season both sides with salt and pepper.

                - Heat a grill pan or skillet over medium-high heat and add the seasoned chicken breasts. Cook for approximately 6-7 minutes per side until the chicken is cooked through and registers an internal temperature of 165°F (75°C).
