Grilled Zucchini Salad

3 medium zucchinis, sliced into 1/4-inch thick rounds

1 red bell pepper, cut into bite-sized pieces

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/4 cup extra-virgin olive oil

2 tablespoons balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper, to taste

1/2 cup crumbled feta cheese (optional)

Fresh basil leaves, for garnish

Instructions
 

Preheat your grill to a medium-high heat, about 400°F (200°C).

    In a large mixing bowl, combine the sliced zucchinis, chopped red bell pepper, halved cherry tomatoes, and thinly sliced red onion. Toss gently to mix.

      In a separate small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, minced garlic, dried oregano, and a generous pinch of salt and pepper. This will be your dressing.

        Drizzle the dressing over the vegetable mixture, then toss everything thoroughly until all the veggies are well-coated in dressing.

          Carefully place the vegetable mixture directly on the preheated grill. Grill for about 4-5 minutes on each side, or until the vegetables are tender and have beautiful grill marks.

            Once the vegetables are grilled to perfection, remove them from the grill and allow them to cool slightly on a plate.

              Transfer the grilled vegetables to a large serving bowl and toss gently to combine. If you’d like, fold in the crumbled feta cheese for a creamy finish.
