Ingredients

2 medium zucchinis, sliced into 1/4-inch thick rounds

1 cup cherry tomatoes, halved

8 ounces fresh mozzarella cheese, sliced

1 cup fresh basil leaves, washed and dried

3 tablespoons olive oil, divided

1 tablespoon balsamic vinegar

1 teaspoon fine sea salt

1/2 teaspoon freshly cracked black pepper

1 teaspoon garlic powder

Optional: Crushed red pepper flakes for garnish

Instructions

Prepare the Zucchini: Preheat your grill to a medium-high heat setting. In a mixing bowl, combine the zucchini slices with 2 tablespoons of olive oil, garlic powder, sea salt, and black pepper. Toss the slices gently but thoroughly until they are evenly coated with the mixture.

Grill the Zucchini: Once the grill is hot, place the zucchini slices on the grates in a single layer. Grill for approximately 3-4 minutes on each side, or until you see attractive grill marks and the zucchini becomes tender but still holds its shape. Remove the zucchini slices from the grill and set them aside to cool slightly.

Prepare the Caprese Stacks: On a large serving platter or individual plates, begin to assemble your caprese stacks. Start with one grilled zucchini slice, then add a slice of fresh mozzarella on top, followed by a few halved cherry tomatoes, and finish with a fresh basil leaf.

Layering: Continue to repeat this layering process—zucchini, mozzarella, tomatoes, basil—until you’ve created 2-3 layers, based on your desired height. Conclude each stack with a final slice of grilled zucchini on top for stability.

Dress the Stacks: In a small bowl or ramekin, whisk together the remaining 1 tablespoon of olive oil and balsamic vinegar. Drizzle this flavorful dressing generously over each of the assembled stacks.

Garnish: If desired, sprinkle a pinch of crushed red pepper flakes over the top of each stack for an added kick and enhanced flavor.

Serve: Present your Grilled Zucchini Caprese Stacks immediately while the zucchini is warm and the mozzarella is luxuriously melty. Relish in the fresh, vibrant flavors of this delightful twist on a classic Caprese salad!
