4 large Portobello mushrooms, stems removed

¼ cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

4 whole wheat burger buns

4 slices of fresh mozzarella cheese (optional)

1 cup baby spinach leaves

1 ripe avocado, sliced

1 medium tomato, sliced

½ red onion, thinly sliced

Your favorite condiments (e.g., mustard, ketchup, mayo)

Instructions
 

Prepare the Marinade: In a small mixing bowl, combine the balsamic vinegar, olive oil, minced garlic, dried oregano, smoked paprika, and a pinch of salt and pepper. Whisk together until blended.

    Marinate the Mushrooms: In a shallow dish, arrange the Portobello mushrooms gill side up and pour the marinade over them. Use a brush or your hands to ensure the mushrooms are fully coated in the marinade. Let the mushrooms marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for deeper flavor infusion.

      Preheat the Grill: Preheat your grill to medium-high heat, aiming for a temperature of around 375°F (190°C).

        Grill the Mushrooms: Remove the mushrooms from the marinade and shake off any excess. Place them on the grill, gill side down. Grill for about 5-7 minutes until they are tender and have nice grill marks. Flip the mushrooms and grill for an additional 5 minutes, placing a slice of fresh mozzarella on each mushroom during the last minute to allow it to melt beautifully.

          Toast the Buns: While the mushrooms are grilling, slice the burger buns in half. Place them on the grill, cut side down, and toast until golden brown, approximately 2 minutes. Keep an eye on them to avoid burning.

            Assemble the Burgers: On the bottom half of each toasted bun, spread a generous layer of your chosen condiments. Place a grilled Portobello mushroom atop the condiments, followed by a handful of fresh spinach leaves, a few slices of avocado, tomato, and red onion. Cap it off with the top half of the bun.
