Ingredients

4 large Portobello mushrooms, stems removed

1/4 cup balsamic vinegar

2 tablespoons extra virgin olive oil

2 cloves garlic, finely minced

1 teaspoon dried oregano

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

4 whole wheat burger buns

4 slices fresh mozzarella cheese (optional)

1 cup baby arugula

1 large tomato, thinly sliced

1 ripe avocado, thinly sliced

Pesto sauce or your favorite condiments (optional)

Instructions

Marinate the Mushrooms: In a medium bowl, whisk together the balsamic vinegar, extra virgin olive oil, minced garlic, dried oregano, sea salt, and black pepper until well combined. Submerge the Portobello mushrooms in the marinade, ensuring they are fully coated. Cover the bowl and let the mushrooms marinate in the refrigerator for at least 30 minutes to an hour for maximum flavor absorption.

Prepare the Grill: Preheat your grill to medium-high heat, or use a grill pan by placing it over medium heat on the stovetop. Allow the grill or pan to reach the desired temperature before grilling the mushrooms.

Grill the Mushrooms: Once heated, carefully place the marinated Portobello mushrooms on the grill with the gill-side facing down. Grill for approximately 5-7 minutes on one side. Flip the mushrooms and continue grilling for another 5-7 minutes, until they are tender and display a nice char.

Melt the Cheese (Optional): If you’re adding mozzarella cheese, position a slice on each mushroom during the last 1-2 minutes of grilling. Close the grill lid to help the cheese melt perfectly.

Toast the Buns: While the mushrooms are grilling, slice the whole wheat burger buns in half. Lightly toast the buns on the grill for about 1-2 minutes until they become golden brown and slightly crispy.

Assemble the Burgers: Place each grilled Portobello mushroom on the bottom half of a toasted bun. Top with a handful of fresh arugula, a few slices of tomato, and several slices of avocado. For an extra burst of flavor, drizzle with pesto sauce or your desired condiments. Cover with the top half of the bun.

Serve and Enjoy: Present your delightful grilled Portobello burgers alongside a side of crispy sweet potato fries or a vibrant mixed salad for a complete and satisfying meal.
