Grilled Pineapple Black Bean Tacos

1 ripe pineapple, peeled, cored, and sliced into rings

1 can (15 oz) black beans, rinsed and drained

1 red bell pepper, diced

1 small red onion, diced

1 ripe avocado, diced

2 tablespoons olive oil, divided

1 tablespoon fresh lime juice

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

8 small corn or flour tortillas

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Grill: Preheat your grill to medium-high heat. If using a grill pan, warm it on the stovetop over medium heat instead.

    Grill the Pineapple: Lightly brush both sides of the pineapple rings with 1 tablespoon of olive oil. Place the rings directly onto the grill and cook them for approximately 2-3 minutes on each side, until you achieve appealing grill marks and a caramelized surface. Once cooked, remove the rings from the grill and let them cool slightly before chopping them into bite-sized pieces.

      Sauté the Vegetables: In a medium skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the diced red onion and red bell pepper to the skillet. Sauté the vegetables for about 5-7 minutes until they are tender and slightly caramelized.         Warm the Tortillas: For corn tortillas, place them on the grill for about 30 seconds on each side or warm them in a dry skillet over medium heat until they are pliable and soft.
