Ingredients

4 slices of rustic bread (such as ciabatta or sourdough)

2 ripe peaches, halved and pitted

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

8 ounces fresh burrata cheese

1 tablespoon balsamic glaze

Fresh basil leaves, for garnish

Optional: honey for drizzling

Instructions

Preheat the Grill: Begin by preheating your grill to medium-high heat. For those using a grill pan, place it over medium heat on the stovetop.

Prepare the Peaches: Take the peach halves and brush the cut sides generously with olive oil. Season lightly with salt and freshly ground black pepper to enhance their natural sweetness.

Grill the Peaches: Place the peach halves, cut side down, directly onto the grill. Allow them to grill for approximately 3-4 minutes, until you see beautiful grill marks and the peaches become tender. Carefully flip them over and grill the other side for an extra 2-3 minutes. Once done, remove from the grill and set aside to cool slightly.

Grill the Bread: While the peaches are cooling, brush both sides of the rustic bread slices with olive oil. Lay the bread onto the grill and toast for about 2-3 minutes on each side until they achieve a golden brown color and a crispy texture.

Assemble the Toast: On each slice of warm grilled bread, scoop a generous portion of creamy burrata cheese. Top each with either a grilled peach half or two slices if you prefer a peachier flavor.

Drizzle and Garnish: Lightly drizzle balsamic glaze over the top of the assembled toast. For a touch of sweetness, consider adding a drizzle of honey. Finally, garnish with fresh basil leaves to add a pop of color and fresh flavor.

Serve Immediately: Present your Grilled Peach Burrata Toast warm for the best experience, and enjoy every delightful bite that combines sweet, savory, and creamy notes!
