  • 8.0 slices rustic bread
  • 8.0 oz goat cheese
  • 0.25 cup fresh basil leaves
  • 0.25 cup fresh chives
  • 0.25 cup fresh parsley
  • 1.0 clove garlic
  • 2.0 tbsp olive oil
  • 0.0 to taste salt
  • 0.0 to taste pepper
  • 0.0 optional arugula or spinach
  • 0.0 optional sliced tomatoes or roasted red peppers

Instructions
 

  • Prepare the Herb Mixture: In a medium bowl, combine the softened goat cheese, chopped basil, chives, parsley, minced garlic, olive oil, salt, and pepper. Mix until well combined and creamy.
  • Assemble the Sandwiches: Lay out 4 slices of rustic bread. Generously spread the herb and goat cheese mixture on each slice. If desired, add a layer of arugula or spinach and top with sliced tomatoes or roasted red peppers.
