200g halloumi cheese, cut into thick slices

4 cups seedless watermelon, cubed

1 cucumber, sliced thinly

1 cup arugula or a mix of salad greens

1/4 cup fresh mint leaves, coarsely chopped

1/4 cup red onion, sliced thin

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

Juice of 1 fresh lime

Salt and pepper, to taste

1 tablespoon honey (optional for added sweetness)

Prepare the Grill: Start by preheating your grill or grill pan to medium-high heat. To prevent sticking, lightly oil the grates with a paper towel dipped in olive oil.

    Grill the Halloumi: Place the thick slices of halloumi on the pre-heated grill. Grill for approximately 2-3 minutes per side, or until golden brown with characteristic grill marks. Once done, carefully remove the halloumi from the grill and set it aside to cool slightly.

      Prepare the Salad Base: In a large mixing bowl, combine the arugula (or salad greens), cubed watermelon, sliced cucumber, chopped mint, and sliced red onion. Toss everything gently to ensure an even distribution while being cautious not to break up the watermelon cubes.

        Make the Dressing: In a small mixing bowl or jar, combine the olive oil, balsamic vinegar, lime juice, and honey (if using). Whisk together until all ingredients are perfectly blended. Season the dressing with a pinch of salt and pepper to taste.
