Grilled Corn & Ricotta Toasts

4 ears of fresh corn, husked

1 cup ricotta cheese

2 tablespoons olive oil, plus extra for drizzling

Zest of 1 lemon

Juice of 1 lemon

1/4 cup fresh basil, chopped

1/4 cup fresh chives, chopped

Salt and black pepper, to taste

4 slices of crusty bread (such as sourdough or ciabatta)

1/4 teaspoon red pepper flakes (optional, add a spicy kick)

Grill the Corn: Begin by preheating your grill to a medium-high setting. Once hot, place the husked corn directly onto the grill grates. Grill for approximately 10-12 minutes, turning the ears occasionally to ensure even charring. The corn should be cooked through and have a nice char on all sides. After grilling, set the corn aside to cool briefly, then carefully cut the kernels off the cob using a sharp knife.

    Prepare the Ricotta Mixture: In a medium-sized mixing bowl, combine the ricotta cheese, 2 tablespoons of olive oil, lemon zest, and lemon juice. Add the chopped basil and chives, seasoning with salt and black pepper to taste. Stir the mixture well until it is creamy and all ingredients are thoroughly blended.

      Toast the Bread: While the corn is cooling, take your slices of crusty bread and brush both sides generously with olive oil. Place the oiled bread on the grill, cooking for about 2-3 minutes on each side or until the bread is golden brown and crispy. Alternatively, you can toast the bread in a skillet over medium heat if you prefer.

        Assemble the Toasts: Once the bread has been toasted to perfection, generously spread the creamy ricotta mixture over each slice. Top with an even distribution of the grilled corn kernels. If you enjoy a bit of heat, sprinkle a pinch of red pepper flakes over the top of each toast.

          Serve: Drizzle a bit of additional olive oil over the finished toasts and add more salt and pepper if desired. Serve immediately, garnished with extra herbs for a vibrant and fresh presentation.
