Ingredients

For the Grilled Chicken:

4 boneless, skinless chicken breasts

2 tablespoons extra-virgin olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Sea salt and freshly ground black pepper, to taste

Juice of 1 fresh lemon

For the Strawberry Salsa:

1 cup ripe fresh strawberries, hulled and finely diced

1/4 medium red onion, finely chopped

1 jalapeño pepper, seeds removed and finely minced (adjust to your preferred spice level)

1/4 cup fresh cilantro leaves, chopped

Juice of 1 fresh lime

Sea salt, to taste

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, sea salt, black pepper, and freshly squeezed lemon juice. Add the chicken breasts to the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Allow the chicken to marinate for at least 30 minutes, but for deeper flavor, marinate for up to 4 hours.

Prepare the Strawberry Salsa: While the chicken is marinating, take a medium bowl and combine the diced strawberries, finely chopped red onion, minced jalapeño, and chopped cilantro. Squeeze the fresh lime juice over the mixture and sprinkle with sea salt. Gently stir to combine all the ingredients, allowing the flavors to meld. Taste and adjust the seasoning as necessary. Cover and refrigerate until you are ready to serve.

Grill the Chicken: Preheat your grill to medium-high heat. Once hot, remove the chicken from the marinade, allowing any excess to drip off. Place the chicken breasts on the grill grates and cook for approximately 6-7 minutes on each side, or until the meat is fully cooked and reaches an internal temperature of 165°F (75°C).

Rest the Chicken: After grilling, carefully remove the chicken from the grill and transfer it to a cutting board. Let the chicken rest for about 5 minutes to allow the juices to redistribute, ensuring each bite stays moist and flavorful.

Serve: Slice the grilled chicken into strips and generously spoon the strawberry salsa over the top. This dish pairs beautifully with sides such as fluffy rice, a vibrant quinoa salad, or a crisp green salad for a refreshing touch.
