Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and black pepper, to taste

Juice of 1 fresh lime

Fresh cilantro, chopped (for garnish)

For the Mango Salsa:

2 ripe mangoes, peeled and diced into bite-sized pieces

1 small red onion, finely chopped

1 jalapeño, seeds removed and minced

Juice of 1 lime

1/4 cup fresh cilantro, chopped

Salt, to taste

Instructions

Prepare the Chicken: In a large mixing bowl, combine the olive oil, ground cumin, smoked paprika, garlic powder, salt, pepper, and freshly squeezed lime juice. Add the boneless chicken breasts to the bowl, making sure they are thoroughly coated with the marinade. Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor infusion.

Make the Mango Salsa: In a medium mixing bowl, combine the diced mangoes, finely chopped red onion, minced jalapeño, lime juice, chopped cilantro, and a pinch of salt. Gently stir the mixture until all the ingredients are well incorporated. Taste and adjust the seasoning if necessary. Set the salsa aside to allow the flavors to meld together while you grill the chicken.

Preheat the Grill: Preheat your outdoor grill to medium-high heat (about 375°F to 450°F). Once hot, lightly brush the grill grates with oil to prevent the chicken from sticking during cooking.

Grill the Chicken: Carefully place the marinated chicken breasts on the preheated grill. Cook for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is beautifully charred with grill marks.

Rest the Chicken: Once cooked, remove the chicken from the grill and place it on a cutting board. Let it rest for about 5 minutes before slicing to allow the juices to redistribute and keep the chicken moist.

Serve: Slice the grilled chicken into strips and arrange them on a serving platter. Generously top each piece with the vibrant mango salsa. For an added touch of freshness, garnish with a sprinkle of chopped cilantro.

Enjoy: Serve your tropical grilled chicken alongside your favorite sides, such as fluffy rice, fluffy quinoa, or a crisp green salad for a delightful meal!
