Ingredients

8 slices of sourdough bread

4 oz prosciutto, thinly sliced

4 oz salami, thinly sliced

4 oz aged cheddar cheese, sliced

4 oz brie cheese, sliced

1/4 cup fig jam

1/4 cup whole grain mustard

1/2 cup arugula

4 tbsp unsalted butter, softened

Freshly ground black pepper, to taste

Instructions

Prep Your Ingredients: Start by gathering all your ingredients. Slice the sourdough bread into even pieces if not pre-sliced. Thinly slice the aged cheddar and brie cheese, and prepare the prosciutto and salami. Ensure your unsalted butter is at room temperature for easy spreading.

Assemble the Sandwiches: On a clean work surface, place 4 slices of sourdough bread. Spread about 1 tablespoon of fig jam on each slice, allowing its sweetness to complement the savory meats. Layer the prosciutto, salami, slices of aged cheddar, and brie cheese on top, followed by a handful of fresh arugula for a peppery crunch. Finish with another slice of sourdough, and spread a layer of whole grain mustard on the outer sides of these bread slices.

Butter the Bread: Generously spread the softened unsalted butter on the exterior of each sandwich. This butter will create a deliciously crispy golden-brown crust when grilled.

Preheat the Grill: Warm your skillet or grill pan over medium heat, allowing it to reach the right temperature for cooking.

Grill the Sandwiches: Carefully place the assembled sandwiches in the skillet. Grill for about 3-4 minutes on one side until they turn golden and crisp. Use a spatula to press down gently, ensuring even grilling. Once ready, flip each sandwich carefully and grill the other side for another 3-4 minutes, or until the cheese is fully melted and the bread is nicely toasted.

Serve: Remove the grilled sandwiches from the skillet and allow them to rest for about a minute. Slice each sandwich diagonally to reveal the delicious layers. Serve warm with additional fig jam or mustard on the side for a delightful dipping option.
