2 large flatbreads (store-bought or homemade)

2 cups cooked chicken, shredded (rotisserie chicken works wonderfully)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup corn kernels (fresh, canned, or frozen)

1/2 cup fresh cilantro, chopped

1 tablespoon olive oil

Marinate the Chicken: In a mixing bowl, combine the shredded chicken with 1/2 cup of BBQ sauce. Mix thoroughly until every piece of chicken is well coated. Allow the mixture to marinate for at least 15 minutes while you get the other ingredients ready.

    Prepare the Flatbreads: Preheat your grill or stovetop grill pan to medium-high heat. Brush one side of each flatbread lightly with olive oil. This will help prevent sticking and will create a nice golden-brown crust.
