Green Chili Turkey Quesadilla Squares

1 lb ground turkey

1 cup canned green chilies, well-drained

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tsp ground cumin

1 tsp garlic powder

½ tsp onion powder

½ tsp smoked paprika

½ tsp salt

¼ tsp black pepper

4 large flour tortillas

2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Sour cream or guacamole (for serving)

Instructions
 

Cook the Turkey: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once the oil is shimmering, add the ground turkey. Use a spatula to break it apart as it cooks, ensuring even browning. Cook the turkey for about 5-7 minutes until it's no longer pink and nicely browned.

    Season the Mixture: Add the drained green chilies, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper to the cooked turkey. Stir well to combine the ingredients. Let the mixture cook for an additional 2-3 minutes to allow the flavors to meld. Once done, remove the skillet from the heat and set aside.

      Prepare the Tortillas: On a clean surface, lay out two of the tortillas. Evenly spread half of the turkey mixture on each tortilla. Next, sprinkle half of the shredded cheddar and half of the Monterey Jack cheese on top of the turkey mixture.

        Add Top Tortillas: Place the remaining two tortillas on top of the filled tortillas, forming two quesadilla stacks.

          Cook the Quesadilla Squares: Wipe the skillet clean and return it to medium-low heat. Add the remaining tablespoon of olive oil to the skillet. Carefully place one quesadilla stack in the skillet. Cook for 3-4 minutes on each side, or until both sides are golden brown and the cheese is melted. Ensure to keep the heat low enough to allow for even cooking. Repeat this process with the second quesadilla stack.
