Ingredients

8 slices of sourdough bread

1 pound deli sliced turkey breast

1 cup shredded Monterey Jack cheese

1/2 cup diced green chilies (canned or fresh)

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

4 tablespoons unsalted butter, softened

Fresh cilantro or parsley, for garnish (optional)

Instructions

Prepare the Spread: In a small mixing bowl, combine the mayonnaise, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Whisk together until the mixture is smooth and all ingredients are fully incorporated. Set the spread aside for later use.

Assemble the Sandwiches: On a clean countertop or cutting board, place 4 slices of sourdough bread. Take a generous portion of the mayonnaise mixture and spread it evenly on each of the bread slices to enhance flavor.

Layer the Filling: Evenly distribute the turkey slices across the smeared sides of all 4 pieces of bread. Follow with an even scattering of diced green chilies to add a spicy kick. Finally, sprinkle the shredded Monterey Jack cheese generously over the top of each sandwich.

Top and Butter: Take the remaining 4 slices of sourdough bread and place them on top of the filled slices, creating full sandwiches. Spread the softened butter generously on the outer sides of each sandwich which will create a perfectly crispy crust once grilled.

Grill the Sandwiches: Heat a skillet or griddle over medium heat. Carefully transfer the sandwiches into the skillet, ensuring they're not overcrowded. Grill each sandwich for approximately 4-5 minutes on one side, or until they reach a golden brown color and the cheese begins to melt. You may gently press down with a spatula to help achieve an even grill.

Serve: Once the sandwiches are beautifully grilled on both sides, remove them from the skillet and allow to rest for about a minute. Use a sharp knife to cut each sandwich in half diagonally for a pleasing presentation. If desired, garnish with fresh cilantro or parsley for a pop of color and flavor.

Enjoy: Serve these delicious turkey melts warm alongside your favorite sides, such as crispy chips, a fresh salad, or tangy pickles for an added crunch.
