1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon turmeric

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (adjust based on spice preference)

Salt and pepper, to taste

4 whole grain wraps or tortillas

1 cup fresh spinach or mixed greens

1 medium cucumber, thinly sliced

1 large tomato, diced

1/2 red onion, thinly sliced

1/4 cup tahini sauce (optional)

Fresh lemon juice, for drizzling

Fresh parsley, finely chopped (for garnish)

Prepare the Chickpeas: In a medium bowl, use a fork or a potato masher to gently mash the chickpeas, making sure to leave some whole for added texture.
