Ingredients

For the Meatballs:

1 lb (450g) ground beef or ground turkey

1/2 cup panko breadcrumbs

1/4 cup freshly grated ginger

2 cloves garlic, minced

1/4 cup green onions, finely chopped

1 large egg

1 tbsp soy sauce

1 tsp sesame oil

Salt and pepper, to taste

For the Ginger Soy Glaze:

1/4 cup soy sauce

2 tbsp honey or brown sugar

1 tbsp rice vinegar

2 tsp freshly grated ginger

1 garlic clove, minced

1 tsp cornstarch mixed with 2 tsp water (for thickening)

Sesame seeds and sliced green onions, for garnish

Instructions

Prepare the Meatball Mixture:

In a large mixing bowl, add the ground beef or turkey along with the panko breadcrumbs, grated ginger, minced garlic, chopped green onions, egg, soy sauce, sesame oil, and a pinch of salt and pepper. Mix thoroughly with your hands or a spoon until all ingredients are evenly combined.

      Form the Meatballs:

Preheat your oven to 400°F (200°C). Use your hands to shape the mixture into meatballs, roughly 1 to 1.5 inches in diameter. Arrange the meatballs on a baking sheet lined with parchment paper, ensuring they are spaced apart for even cooking.

          Bake the Meatballs:

Place the baking sheet in the oven and bake the meatballs for 15-20 minutes, or until they are fully cooked and have developed a nice browned exterior.

              Prepare the Ginger Soy Glaze:

While the meatballs are baking, combine the soy sauce, honey (or brown sugar), rice vinegar, grated ginger, and minced garlic in a small saucepan over medium heat. Stir continuously and bring the mixture to a gentle simmer.

                  Thicken the Sauce:

Once the sauce begins to bubble, add the cornstarch mixture and stir well. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly. Remove from heat and set aside.

                      Glaze the Meatballs:

When the meatballs are finished baking, gently transfer them into the saucepan with the ginger soy glaze. Toss the meatballs carefully until they are completely coated in the glaze.

                          Serve:

Arrange the glazed meatballs on a serving platter. Sprinkle with sesame seeds and sliced green onions for an added touch of flavor and color. Serve the meatballs over steaming bowls of rice or alongside vibrant stir-fried vegetables for a delightful meal.
