4 medium zucchinis, spiralized into noodles

4 tablespoons olive oil, divided

4 cloves garlic, finely minced

1 cup cherry tomatoes, halved

1 bell pepper, thinly sliced (choose any color for a vibrant mix)

1 cup broccoli florets, cut into bite-sized pieces

¼ teaspoon red pepper flakes (optional, for heat)

Salt and freshly cracked pepper, to taste

½ cup grated Parmesan cheese

2 tablespoons fresh basil, chopped (for garnish)

1 tablespoon balsamic glaze (optional, for drizzling)

Instructions
 

Prepare Zucchini Noodles: Using a spiralizer, spiralize the zucchinis into noodles and set them aside. If you prefer flatter noodles, a vegetable peeler can also be used.

    Sauté Garlic: In a large skillet or wok, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the minced garlic and sauté for approximately 30 seconds, or until it becomes fragrant and lightly golden.

      Cook Bell Pepper and Broccoli: Add the sliced bell pepper and broccoli florets to the skillet. Stir-fry for around 3-4 minutes, ensuring that the vegetables remain crisp yet tender.

        Incorporate Cherry Tomatoes: Stir in the halved cherry tomatoes and optional red pepper flakes. Continue to cook for an additional 2-3 minutes until the tomatoes soften and start to blister, releasing their juices.

          Add Zucchini Noodles: Push the sautéed vegetables to one side of the skillet. On the empty side, add the remaining 2 tablespoons of olive oil, then introduce the spiralized zucchini noodles. Gently toss everything together, cooking for about 2-3 minutes until the noodles are evenly heated but still retain a slight crunch.

            Season and Add Cheese: Season the stir fry generously with salt and freshly cracked pepper. Sprinkle the grated Parmesan cheese over the top and stir well to combine, allowing the cheese to melt slightly into the warm noodles and vegetables.
