1 lb sirloin steak, cut into bite-sized pieces

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil, divided

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

1 lb baby potatoes, halved

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - Place the halved baby potatoes into a medium pot and cover them with water. Add a generous pinch of salt to the water.

        - Bring the water to a boil over medium-high heat. Once boiling, reduce the heat and let it simmer until the potatoes are fork-tender, about 10-12 minutes. Drain the potatoes and set them aside.

          Roast the Potatoes:

            - In a large mixing bowl, combine the drained potatoes with 1 tablespoon of olive oil, salt, pepper, and half of the chopped rosemary and thyme.

              - Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven until the potatoes are golden brown and crispy, approximately 20-25 minutes, tossing them halfway through for even cooking.

                Cook the Steak Bites:

                  - While the potatoes are roasting, generously season the steak pieces with salt and pepper.
